Bacon, Spinach & 3 Cheese Cob Loaf

Bacon, Spinach and 3 cheese Cob Loaf


2 red (salad) onions (chopped)

approx 180gm short cut bacon rashers (sliced)

2 garlic cloves (or 1 heaped teaspoon of minced garlic)

approx half a bag of fresh baby spinach leaves

1 x 22cm cob loaf

250g block philly cheese

approx 500ml sour cream

1 cup grated mozzarella cheese

1/2 cup grated tasty cheese



* preheat oven to 180 degrees (160 fan forced)

* heat a teaspoon of oil in a pan and add garlic and chopped onion,

   cook stirring occasionally until browned and softened

* add bacon and cook until starting to colour

* add spinach leaves, toss until wilted

* set aside to cool

* cut cob loaf approx 1/4 from the top and set lid aside

* scoop bread out of middle of loaf leaving about 1.5 cm edge. Pull scooped out bread apart to give a rustic look

* combine the 3 cheeses and sour cream together, season with salt and pepper and mix.

* combine the cheese mixture and the onion and bacon mixture together

* spoon mixture into cob loaf and place lid on top and place extra bread around cob loaf on baking tray

* put into oven and cook for 20 minutes or until golden

* Serve with extra french stick or baguettes sliced into large bite size pieces.
