Dad's Cooking Breakfast at Seal Rocks!

You know you are going to need a solid breakfast before you go out to enjoy an action packed day at Seal Rocks, here are some ideas to keep the troops well fed for their busy day at the beach.

French Toast

2 eggs

1⁄2 cup milk

1⁄4 teaspoon vanilla extract (optional)

1⁄2 teaspoon cinnamon sugar

6 slices bread/rolls – if large, can slice into fingers

  • Beat eggs in a shallow bowl. Add milk, vanilla, and cinnamon sugar, and beat until frothy.
  • Soak each slice of bread in the egg mixture, first on one side, then the other.
  • Cook both sides on a preheated hotplate/frypan until golden.   If needed you can season the hotplate/frypan with a knob of butter before toasting the bread.
  • Serve with maple syrup drizzled over bread, or cinnamon sugar sprinkled lightly.

Butter

  • Butter the bread slices, both sides.  
  • Cut a hole in the middle of the bread that can accommodate a cracked egg, about 10cm.
  • In a greased frypan, which is already hot and sizzling, place the bread.    
  • Put another knob of butter in the hole in the middle of the bread, and then crack 1 egg into the hole.      
  • Cook, until the bread, is golden on the bottom, and then CAREFULLY, using a wide spatula, flip egg/bread combo and brown the other side of the bread.
  • How you like your eggs will determine how long you cook each side.    Season according to your taste.

Both recipes are even yummier when coooked on a flat barbeque plate, so let Mum have a sleep in get Dad out of bed and on barbie duty!
